1. Curing agent; nutritional fortifier; flavoring agent (used in combination with magnesium sulfate, salt, calcium hydrogen phosphate, calcium sulfate, etc.); fermentation aid for Japanese sake; water-removing agent (used in fish cakes at 0.05%–0.1%); texture modifier (used with polyphosphates as an elasticity enhancer for surimi products). Due to strong bitterness, the usual dosage is less than 0.1%.
When slowly heated to 300 °C, it decomposes to produce toxic and corrosive fumes containing chlorine.A large amount of heat is released when dissolved in water.
